Feeling cozy on an autumn day – Pear and chocolate crumble!

Fall is here. I’m currently writing this blog post in my bed, with two blankets on and my fingers are literally freezing. The weather is pretty horrible today. I woke up to a dark sky full of grey clouds and my mood has started to sink down as soon as I stepped out of my warm and cozy bed. It is quite a dark time for me, I’m trying to juggle 300 things together, all at once, without realizing that maybe I was going a little crazy. I’m currently trying to write my thesis, studying for my last ever exam at the university, which I must admitt I’m pretty happy about and I’m also trying to find a job for when I graduate. I know it may seem nothing to you, but for me these are quite a lot of stuff to go through. So to cheer me up a little bit from such a cloudy day, I lit up a few of my favourite candles and put on Ludovico Einaudi’s music on spotify to relax me while I try to write this blog post.

Sometimes I’m very inspired. I can write a blog post in literally two minutes because words just come out like a waterfall and the only thing I have to do is type them out on my computer and I’m good to go. Some other days instead, like this for instance, are a complete other story. I literally have been sitting here on my bed for two hours staring blankely at my computer, and no word or even thought came out. My mind must be frozen from the cold. Well all these nice and maybe a little incoherent words just to introduce you to a blog post that has nothing to do with depression, on the contrary it is definetly about something that will warm you up and make you feel cozy and autumny.

I want to introduce you to the best crumble you have ever seen and eaten in your entire life. It is a pear, chocolate and walnut crumble that will melt your heart. It is the easiest recipe to make and after you taste it, trust me, it will be gone in no time. I highly recommend eating it when it’s hot, you can totally warm it up in the microwave for when you need it, and of course don’t forget to put a scoop of ice cream right on top and welcome to heaven. Ingredients:

Pear mixture

  • 1.4 kg pears
  • 1 lemon, halved
  • 50 gr butter
  • 100 gr caster sugar

Crumble topping

  • 100 gr butter
  • 100 gr flour
  • 100 gr brown or demerara sugar
  • 7 tbsp oats
  • 1 tbsp almond milk
  • 80 gr walnuts, roughly chopped
  • 100 gr dark chocolate

Method:

  1. Preheat the oven to 180°. Peel and core the pears, cutting them into quarters. As you go, rub them with the lemon halves to prevent browning.
  2. Melt the butter in a large frypan. Add the caster sugar and stir for 1-2 minutes. Add the pears, coating them with the sugar and butter. Let the pears cook and soften – as you do this, the sugar will start to caramelise.
  3. Once the pears are just tender (a good way to test this is when you can spear them through with the tines of a fork and meet only a little resistance) and the sugar is caramelised, normally around 10-15 minutes, tip the pears and the leftover juices into a baking dish.
  4. To make the crumble, rub the butter into the flour with your fingers or use a food processor, pulsing the mixture until it resembles coarse breadcrumbs.
  5. Stir in the brown sugar and oats. Add the tablespoon of milk and shake until it forms gravel size lumps. Stir through the chocolate and walnuts.
  6. Tip the crumble mixture over the pears in a roughly even layer. Bake for 35-45 minutes or until lightly browned and crunchy on top.
  7. Dust with icing sugar and serve hot with ice cream
