The best blueberry lemon cake ever!

 

A few weeks ago, one of my roommates invited me to her graduation. Since we’ve been living together for only a few months, I didn’t know what to get her as a present. Usually here in Italy, graduations are quite a special and important moment and most of all I wanted her to remember that day with a smile on her face. That’s when I tought that instead of buying something frivolous, I could make her a beautiful cake that we could eat together while taking pictures and enjoying the rest of the day.

The only thing I knew was that she liked lemon, so I started searching for a 4 tier cake that had lemon in it. I’ve searched through different blogs and website, but I couldn’t find anything that sounded super delicious and also looked super nice. Thta’s when I tought that i should make my own recipe, to make the cake extra special. So I’ve decided to make a blueberry lemon cake with lemon curd.

This cake came out so good and beautiful that I’ll be surely making it again. The lemon curd really made all the difference, it cut through the sweetness of the cream cheese frosting and it added a nice edge to the cake. I also love the way I decided to decorate it. I cut a few lemon slices and place them around the edge of the cake and it looked really nice and put together.

I really hope you try and make this cake. It’s definetly something that you would make for a special occasiona, but it’s definetly worth it. Now let’s get to the recipe!

Ingredients:

For the cake:

  • 390 gr flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 tsp salt
  • 390 gr sugar
  • 225 gr butter
  • 1 tbsp lemon zest
  • juice of 2 lemons
  • 1/2 tsp vanilla extract
  • 200 ml milk
  • 100 gr vanilla yogurth
  • 300 gr fresh blueberries

Method:

  • Sift the flour into a mixing bowl. Add baking powder, baking soda and salt and whisk for 30 seconds, set aside. In another bowl whip together the butter, sugar and lemon zest until mixture is pale and fluffy. Add the milk and then stir in the yogurth and lemon juice, let rest for 3 minutes.
  • Meanwhile, mix the eggs into the butter mixture one at a time, then stir in the lemon juice and vanilla extract. Toss the blueberries with 3 Tbsp of the flour mixture. Working in three separate batches, beginning and ending with remaining flour mixture, add 1/3 of the flour mixture (to the butter/egg mixture) alternating with 1/2 of the milk mixture and mixing just until combined after each addition. Gently fold in the blueberries. Divide the mixture evenly among tow buttered and floured baking pans. Bake in preheated oven at 175 C° until toothpick inserted into the center comes out clean, about 24 – 27 minutes. Cool in baking pans about 20 – 30 minute then invert onto a wire rack to cool completely. Once cool, frost with cream cheese frosting and decorate with blueberries and lemon slices if desired.

For the cream cheese frosting:

  • 400 gr cream cheese
  • 230 gr soften butter
  • 350 gr icing sugar
  • 80 ml heavy cream
  • 1 tsp vanilla extract

Method:

In a large bowl mix the butter and cream cheese for 5 to 7 minutes. Add the icing sugar and vanilla extract. Mix well. Add the heavy cream and mix untill well combined.

For the Lemon curd:

  • 300 gr caster sugar
  • 50 gr corn starch
  • 120 ml lemon juice
  • 4 large egg yolks
  • a pinch of salt
  • 2 lemons, zest finely grated
  • 60 gr butter

Method:

Place the sugar, corn starch and 450 ml of water in a large saucepan and stir until you have a smooth mixture. Stir in the lemon juice, egg yolks and salt. Place over a medium heat and keep stirring while the mixture boils, for about 10 – 12 minutes. Stir in the lemon zest and butter until the butter has melted, then remove the pan from the heat and allow to cool.

Assembly:

Cut both your cakes in half. Frost each layer with the cream cheese frosting and top it with some lemon curd. When all the layers are frosted, cover the entire cake with the remaining cream cheese frosting. Top it with some lemon curd, blueberries and cover the edges with some lemon slices.
