Peaches and Vanilla coffee cake – #Summerbaking

Summer is finally here and I’m so excited for my next holiday in August. My boyfriend and I are going to Sicily and I can’t wait to relax and tan in the sun. Where do you guys usually go on holiday? My dream holiday would be going to Santorini in Greece. I would love to walk around the cubbled street and the white and blue houses. But for now Sicily sounds pretty good for me. Have you ever been there? I’ll try to snap a few pictures for you, so you can see the beauty of the island.

Since is officially summer I couldn’t stop myself from baking something sweet, light and fruty. When it’s really hot outside I really don’t feel like eating a lot. However my sweet tooth is always pretty needy and even in the heat I started creaving sweet desserts. However, since my holiday is just around the corner, I’m trying to eat a little bit healthier and work out a little bit more to keep me in good shape for the bikini season. To be honest it’s not working as I would like but at least I’m trying. That’s why I was thinking of baking something sweet that I could have for breakfast (since we’re all allowed sweet things for breakfast, right?). That’s when I started thinking about peaches and cream. I’m sure you all know this amazing dessert. It totally makes me think about summer because it’s so delicious, but also light and fresh. And that’s when I had an idea. Why not transforming peaches and cream into a coffee cake?

That sounded soo good that I had to give it a shot. So this is basically how my Peaches and Vanilla coffee cake came together. And it’s pretty damn good. Now let’s get to the recipe!

Ingredients:

For the cake

  • 2 1/4 cups of flour
  • 2/3 cup of sugar
  • ½ tsp of salt
  • 2 tsp of Baking Powder
  • ½ tsp of Baking Soda
  • 2 tsp of Vanilla Extract
  • 1 /4 cup of Vanilla Yogurt
  • 1 cup of Milk
  • 2 Eggs
  • ½ cup of Unsalted butter
  • 4 Peaches

For the crumble topping

  • 50 gr melted butter
  • 100 gr caster sugar
  • 50 gr flour
  • 1 tsp cinnamon
  • 50 gr almonds

Method

Preheat your oven to 175 C°.

For the crumble: In a bowl, combine the melted butter, sugar, flour, cinnamon and finely chopped almonds. Stir to combine.

For the cake: In a bowl, mix together the flour, salt, baking powder and baking soda, set aside.
In another bowl, whisk together the sugar with the butter. Add the eggs and vanilla extract and mix those in to combine well.
Add the milk and yogurt and combine them. Add the wet ingredients into the dry and whisk everything together so it’s well combined. Cut the peaches into slices getting rid of the skin and core. Pour half  of your batter into your prepared pan and top with the peaches. Pour the other half of the mixture ontop.
Sprinkle the crumble topping all over the batter, pop it in the oven to bake for about 45 minutes to an hour or until it’s fully cooked through.
