Red Velvet cake with cream cheese frosting!

Hey guys! If you follow me on facebook you know that a couple of days ago I created a poll asking you guys what cake you wanted me to bake next. The choice was between a banoffee cake and a red velvet cake and the majority of you voted for the red velvet cake! I was soo happy that you guys chose the red velvet because i had never made it. I knew it was going to be a challenge, but I was ready to give it a try. I don’t know if you guys know this but tomorrow, the 8th of May, is exactly 5 years that me and my boyfriend are offcially a couple. I was really excited to bake this cake for him and he was super impressed when he saw it! The red velvet cake is the perfect cake to celebrate these types of things. First of all is red, the colour of love, and most importantly the cream cheese frosting is delicious and perfectly sweet. The recipe in itself is definetly not difficult, you just need to be carefull when dosing the food cloring. If you use too little, the cake is going to look brown like a chocolate cake. But if you use too much is going to look really orange. I reckon that the perfect amount would be about 4 tbsp. Let me know if you guys make this cake. It’s soo good and moist that you’re going to melt your loved one’s heart.

Ingredients:

For the red velvet cake

  • 240 ml milk
  • 1 tbs vinegar
  • 300 gr sugar
  • 180 gr butter
  • 4 eggs
  • 1 tsp vanillla extract
  • 350 gr flour
  • 4 tsp baking powder
  • 2 tbsp cocoa powder
  • 4 tbsp red food colouring

For the frosting:

  • 400 gr cream cheese
  • 230 gr soften butter
  • 350 gr icing sugar
  • 80 ml heavy cream
  • 1 tsp vanilla extract

To decorate:

  • strawberries
  • white chocolate

Method:

In a cup add the milk and vinegar and set aside for 5 to 7 minutes. In a bowl mix the sugar and melted butter until well combined. Add the eggs, vanilla extract and beat together. Add the soured milk and stir to combine. In a different bowl mix together the flour, baking powder and cocoa powder. Sift the dry ingredients in the wet mixture and whisk until well combined. Add the food colouring. Divide the mixture into two 9 inches pans and bake in the oven for 40-45 minutes at 170 C°.

Frosting: In a large bowl mix the butter and cream cheese for 5 to 7 minutes. Add the icing sugar and vanilla extract. Mix well. Add the heavy cream and mix untill well combined.

Assembly: Cut both your cakes in half. Frost each layer and top the last layer with the rimaning cream cheese. Add white chocolate strawberries to the top. Serve.
