Chocolate cream cheese plumcake!

Summer is coming and the thought of having to wear a bathing suit in front of someone makes me shiver. Unfortunately I have a really slow methabolism which means that every single unhealthy thing I eat gets stuck on my hips and calves. I’ve been struggling with my weight for my entire life and I’ve been trying to get on the healthy wagon and start eating healthy and working out more. I’m currently on my 13th day of my new healthy lifestyle and I must say that I’m feeling a lot better. I have more energy. I sleep better and I’m also starting to see some changes in my body. One of the best things that I’m doing is definetly running. If you are trying to loose weight, I highly recommend trying to run. I personally love it. I just love putting on my trainers, turning on the music and running while the sun is going down. I just feel amazing afterwords. Let me know if you would like an update every now and then on how my diet is going.  I still have a cheat day every week to enjoy life a little. I need to have a day in the week where I get to eat pizza, cakes, sushi (because I’m a sushi lover) and all the things that if I would eat them every day I would weight 300 pounds. I think is really important to take a day off from your diet. If not every week, at least every two weeks. Otherwise after 20 days I’ll just give up everything. So yesterday was my cheat day (also one of my good friends came to visit me in Milan form France) and I was seriously craving something chocolaty. But also I wanted to make something different from the typical chocolate cakes or brownies that I pretty much make everytime. So I searched a little bit and then I found this amazing blog that I have to cite. It’s called OPSD . For my fellow italian readers it’s called Oggi Pane Salame Domani, brilliant name if you ask me, which literally means Today bread, salami tomorrow. The blog is super cute and it has a lot of interesting recipes but one really stood out to me. The cream chocolate cheesecake with the shape of a plumcake. OMG I had to try it. This plumcake is so soft and moist, you are going to die for it. I am completely sold. It’s really different from anything I had before but I’m so happy I found it!

Ingredients:

  • 200 gr cream cheese
  • 150 gr flour
  • 150 gr dark chocolate
  • 100 gr milk chocolate
  • 100 gr soften butter
  • 100 gr sugar
  • 3 eggs
  • 2 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • pinch of salt

Method:

  1. Pre heat the oven at 160 C°.
  2. In a bowl mix the butter and the sugar together untill creamy.
  3. Add the cream cheese eggs and vanilla extract. Mix to combine.
  4. Cut the dark chocolate in cubes and melt in the microwave. Set aside.
  5. In another bowl, sift the flour, cocoa powder, baking powder and salt.
  6. Pour the chocolate in the cheese mixture and stir with a spatula. Add in the flour mixture a little bit at a time.
  7. Butter and flour a plumcake tin and cover with parchment paper.
  8. Pour in 3/4 of the mixture, shred half of the milk chocolate and spread ontop of the mixture. Cover with the remining batter.
  9. Sprinkle on top the rest of the milk chocolate
  10. Bake in the oven for 45 minutes. Let cool before serving.
