Valentine’s day has come and gone and even though I always say that we should celebrate love everyday, I love making my valentine’s day extra fancy and super sweet. This year me and my boyfriend decided that we weren’t going out for dinner and that we wouldn’t buy each other any present. That’s because on our last day in Budapest we went on a beautiful cruise on the Danube, where we drank champagne, ate amazing food whilst listening to a pianist playing romantic music and watched the sun set on the most romantic dinner of our entire lives. Since it wasn’t exactly a cheap dinner (but totally worth it), we chose to spend more money on our last day in that magical city and renounce to our usual valentine’s dinner in a fancy restaurant.
However I still wanted to make our day special, so I asked him what he wanted to do. Surprisingly, he asked me if we could bake a cake together. How could I say no? That’s why I love him so much. He knows how much I love baking with him and even though he enjoys baking, he wouldn’t do it everyday. So for me it was even more special. The first step was deciding what to make. I’m very picky when it comes to baking. So i asked him what was one ingredient that he really wanted in the cake and he said white chocolate. A lot of ideas started to run in my mind and that’s when it hit me. A vanilla cake with a white chocolate frosting and strawberries. OMG the idea was already appealing.
It was probably the cutes and more romantic Valentine’s day we ever had. We spent the evening playing in the kitchen whilst whisking and mixing around our ingredients. My favorite part was assembling the cake because at the very end I decided to dip a few strawberries in melted dark chocolate and place them on top of the cake. I honestly think that it look so beautiful and the fact that we did it together was even more special. The cake was super moist and soft and it smelled amazing. The white chocolate frosting is to dye for. One thing that I really love about this cake is that it feels super light. It is not one of those cakes that after a few bites you feel already full. You really enjoy eating it beacuse it doesn’t make you feel like you just ate a giant water melon haha.

Heat oven to 175°C. Butter and flour two 15 cm cake pans. Melt the butter and let it cool.
Whip eggs, sugar and vanilla until very light and fluffy, about 5-7 minutes. Heat the milk until lukewarm and add to the egg mixture. Whisk in the melted butter. Mix together flour, baking powder and salt in a bowl. Add dry mixture to the batter and stir until smooth. Divide the batter between the two prepared pans.
Bake for 28-30 minutes, then let the cakes cool for 10 minutes in their pans before inverting them onto a cooling rack. Let cakes cool completely.
White chocolate frosting:
Heat the cream in a small saucepan over medium heat, let the cream come to a gentle bubble. In another bowl, add the white chocolate and butter. Pour the cream over the white chocolate. Let the mixture sit for 5 minutes. Whisk until the mixture comes together and is smooth. Chill in the fridge until it comes to room temperature. Pour the cooled white chocolate into the bowl of a mixer, and beat until it becomes fluffy.
Spread a thick layer of frosting onto the first cake and top it with sliced strawberries. Place the second cake layer on top and cover with the frosting. Dip a few strawberries in some melted darck chocolate and place them on top of the cake.
