I’m sure everyone has had brownies at least once in their life. Unless you have been living in a cave for the last 10 years. Brownies are probably one of my favorite desserts ever. Oddly enough I have never made them here on my blog. I’ve tried out countless brownie recipes, all very good to be honest, but I never thought about snapping a few pictures and share them with you. Maybe because I feel like everyone knows a good place in their city that makes really good brownies, because they’re really easy to make but yet so good. That’s why, while I was thinking about a dessert to make for my boyfriend and my best friend, I thought about making brownies. Whilst I was searching for the perfect recipe, I stumbled across the Wit&Vinegar‘s blog. And then I saw it. The most increadible recipe. But with a twist. I decided to make Blondies. Basically blondies are the white version of brownies. Some people make them with white chocolate which, if you ask me, it’s not such a bad idea at all. But I made them with a vanilla batter and chocolate covered peanuts. Yep, I said chocolate covered peanuts.
These blondies are absolutely to die for. I highly recommend eating them warm, or hit them up in the microwave and top with a scoop of vanilla ice cream. OMG my mouth is watering just by typing this. Well I hope you guys will give this a go. Let me know if you try out this recipe!
Melt the butter in the microwave. Add the sugar and set aside for at least 15 minutes. In a bowl melt the chocolate in the microwave. Add the peanuts and stir until they’re all completely covered in chocolate. Pour the mixture on a baking sheet that fits in your freezer and let them set for 15 minutes or untill the chocolate is firm.
When 15 minutes have passed add the eggs and vanilla extract to the butter mixture and whisk untill well combined. Fold in the flour and baking powder just untill the flour disappears.
Take the peanuts out of the freezer and break them in small chuncks. Add them to the batter and stir gently with a spatula just untill combined. Add the batter to a pan covered with parchment paper and bake for 20 -25 minutes at 180 C°.
Serve warm with a scoop of ice cream.
