Bye bye 2015 – New Year’s eve cake!

I can’t believe another year has passed. Sometimes I feel like time flies and it goes a little too fast. But that’s just life, isnt’it? Every year me and my friends get stuck on deciding what to do for new years’eve. I don’t know why  is so difficult for us to decide. I guess it’s because we all want to do something different and exciting but we can never find anything new. Unfortunately we live in a small town and there aren’t many exciting things to do. This year we decided to have dinner all together at one of our friends’ house and then go to the disco.

For the dinner we ordered food at a local restaurant and I must say that everything was really good.  For the dessert me and my friend Mino decided to bake the ultimate new year’s eve cake. It honestly turned out really good. Not only it looked amazing, it was super good too. It was a four layers chocolate cake with mascarpone frosting, dark chocolate ganache and mixed berries.

Ingredients:

For the chocolate cake:

  • 75 gr butter
  • 270 gr all purpose flour
  • 60 gr cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 340 gr granulated sugar
  • pinch of salt
  • 2 eggs
  • 240 ml milk
  • 120 ml strong hot coffee or water

Dark chocolate ganache

  • 50 g dark chocolate
  • 1/4 cup heavy cream
  • 1 tbsp butter

Mascarpone frosting

  • 1 tub (250 g) mascarpone cheese
  • 3-4 tbsp powdered sugar
  • 1/3 cup + 1 1/2 tbsp heavy cream

Decoration

  • mixed berries

Method:

For the chocolate cake:

Preheat oven to 350°F (175°C). Butter and flour two 18 cm baking pans. Melt the butter and let it cool. Sift the flour, cocoa powder, baking powder, baking soda, sugar and salt into a large bowl. Add eggs, milk, coffee and butter and stir until batter is smooth. Divide the batter between the baking pans and bake for 30-35 minutes or until a cake tester comes out clean. Let the cakes cool in their pans before you turn them out onto a cooling rack to cool completely.

For the chocolate ganache:

Chop the chocolate finely and put in a bowl. Heat the cream and butter in a saucepan until hot but not boiling, then pour the cream mixture on top of the chocolate. Leave for 30 seconds, then stir until completely smooth. Leave to cool to spreadable consistency.

For the mascarpone frosting:

Beat the mascarpone and sugar until creamy. Add the heavy cream and whip until thick.

Assembly:
Put the first cake layer on a serving platter or cake stand. Spread a thick layer of mascarpone frosting on top. Put the next cake layer on and repeat the same steps as before. If you want, you can spread a thin layer of mixed berries in between each layer.
Top with the last layer. Spread a thick layer of ganache on top and let it fall on the sides. Decorate with fresh berries and icing sugar
