Merry Christmas everyone!!! I can’t believe that Christmas as come and gone already! I think that the best part about christams is not even the day in itself, but the countdown to it is the most exciting part. Of course I love spending Christmas with my family. We eat a lot, we laugh, we play cards and we have a really good time in general. But apart from that, what’s more exciting than starting december and thinking about what presents you whant to get for that person, seeing all the christmas lights and everyone is in a realy good spirit? Nothing in my opinion. And now that christmas is gone and we have to wait an entire year to celebrate it again, what do we have left?

Well, leftovers of course. Even if christmas has gone, we still have a bunch of days left of our holidays so why wasting such an amazing opportunities to back some delicious christams cookies? I had a lot of flour and sugar left in the house so I found a super simple and quick recipe to make these really festive christmas cookies.

Ingredients:

  • 300 gr flour
  • pinch ground pepper
  •  2 tsp cinnamon
  • 2 tsp ginger
  • 1 tsp baking powder
  • pinch of salt
  • 100 gr sugar
  • 2 eggs
  • 100 gr butter
  • 4 tbsp honey
  • 70 gr dark chocolate
  • coconut

Method:

In a bowl mix the flour, cinnamon,  pepper, ginger, baking powder, a pinch of salt and sugar until well combined. Add the butter and crumble up the mixture using your hands. Set aside. In a separate bowl beat together the eggs and honey. Add slowly the eggs mixture to the wet mixture (be carefull, add the wet mixture slowly as you probably won’t need all of it). Using your hands start combining the mixture until it forms a ball. Flour your work surface and knead your dough until soft and compact. Roll out your dough with a rolling pin and cut out your cookies ( I used christmas themed cookie cutters, but you can use whatever you have in the house or even cut them by hand). Place the cookies on a baking tray covered in parchment paper. Bake in the oven at 170 C° for 15/20 minutes. When cooled, sprinkle with melted dark chocolate and coconut.
