I think that these pictures speak for themselves. Not only they speak, they scream out loud I would say haha. This is probably the best ring cake I have ever baked. The other day I was talking to my roommate about our love for breakfast ( yes we LOOOOVEEE to have breakfast) and what we could bake to make things more interesting in the morning. Since we are trying to be a little bit healtier, we didn’t want to make something extra chocolaty but that was still light and tasty at the same time.
Me and my mom used to make this cake when I was little. It brings up so many memories. I used to wake up in the morning, go to the kitchen and feel the smell of vanilla and lemon that was coming from the oven. I would sit on the counter and wait for the cake to be ready whilst my mom was making coffee, already picturing in my mind the taste of that super soft cake dipped in the cappuccino. It was just soo good! My mom would always turn on the radio in the morning while she was making that cake, so every sunday, when I started to hear the music, I knew that the cake was waiting for me in the kitchen.
Trust me when I tell you that you are going to love this cake. It’s really easy to make, super light and it tastes absolutely delicious. If you have kids, they are going to love it. I highly recommend to dip it in cappuccino or you could also put some nutella or yogurth on it because it would taste incredible!

Beat the egg whites with a pinch of salt until soft peaks form. Set aside. In a bowl whisk the egg yolks with the sugar until firm. Add the oil, yogurth, flour, baking powder and the juice and the zest of the lemon. Pour the egg whites into the mixture and slightly fold them in with a spatula. Put the batter in a ring cake tin and put it in the oven at 160 C° for 50 minutes.
