The best cookie recipe – Cinnamon and honey cookies!

I am definetly getting too excited for the holidays. I know that christmas is still quite far, but I’m really getting into the holiday spirit. Halloween is in less than two weeks so what’s a better occasion to start making holiday themed sweets? When I think about winter holidays, the first thing that comes to my mind is cinnamon. During the holidays, cinnamon is a must for me. It just makes me feel warm and cozy inside. So this time, I’ve decided to bake something a little bit different from my typical cookie recipe. I baked some cinnamon and honey cookies. Honey is a great ingredient for cookies because it makes them super soft on the inside, but still a little bit crunchy on the outside, which is something that i really really like in a cookie. Also, since I wanted to be extra chic with this cookies, I decided to add some wallnuts and a sprinkle of melted chocolate ontop. Trust me, not only these cookies look amazing (like they just came out of a bakery) they also taste amazing! I think that i will also try and make these same cookies in halloween shapes and decorate them with icing sugar and of course I will ppost pictures :) So stay tuned for that!

But now let’s get to the recipe!

Ingredients:

300 gr flour

2 1/2 tsp cinnamon

1 tsp baking powder

pinch of salt

100 gr sugar

2 eggs

100 gr butter

4 tbsp honey

50 gr coarsely chopped walnuts

50 gr dark chocolate

Method:

In a bowl mix the flour, cinnamon, baking powder, a pinch of salt and sugar until well combined. Add the butter and crumble up the mixture using your hands. Set aside. In a separate bowl beat together the eggs and honey. Add slowly the eggs mixture to the wet mixture (be carefull, add the wet mixture slowly as you probably won’t need all of it). Using your hands start combining the mixture until it forms a ball. Flour your work surface and knead your dough until soft and compact. Roll out your dough with a rolling pin and cut out your cookies. Place on top of the cookies the coarsely chopped walnuts and put them on a baking tray covered in parchment paper. Bake in the oven at 170 C° for 15/20 minutes. When out of the oven and cooled, sprinkle your cookies with some melted dark chocolate.
