Here in Milan life is pretty hectic and sometimes its hard to catch up to the million things you have to do. Between following classes at the uni, work, events around the city, boyfriend and friends, I have just a little time to completely relax and take care of myself. The other day I had some friends coming over to my house and I wanted to make them feel as comfortable as possible. I am the kind of person that wants her guests to feel at home so I’ve put some nice and comfy pillows on their bed, lit up a few candles and added a blanket for some extra coziness. But there was something missing. I personally think that the best way to make someone feel comfortable in your house is to welcome them with something sweet. Unfortunately, I didn’t have a lot of time to bake a 4 layers magnificent cake so I had to think about something else.

The first thing that came into my mind was…….MUFFINS! I think I have the most amazing recipe for chocolate muffins. It’s super easy to make and it tastes absolutely delicious! If you are like me and you are someone who doesn’t have a lot of free time, these muffins are perfect for you! It will take you less than an hour to make them and it looks like you’ve spent the entire afternoon baking in the kitchen.

INGREDIENTS:

  • 300 gr all-purpose flour
  • 80 gr cocoa powder
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 250 gr granulated sugar
  • 100 gr butter, melted
  • 250 ml buttermilk (about 1 cup or 8.45 US fluid ounces)
  • 2 large eggs
  • 100 gr dark chocolate (70%), coarsely chopped
  • 100 gr white chocolate, coarsely chopped
  • 100 gr almonds, coarsely chopped

METHOD:

Heat the oven to 200°c (392F). Prepare a cupcake pan with 12 muffin liners. Mix the flour, cocoa powder, baking powder, baking soda and salt in bowl. Set aside. Mix the sugar, butter, buttermilk and eggs in a large bowl. Add dry ingredients to wet ingredients and mix until just combined. Stir in the white and dark chocolate, but save 1/4 of the chocolate to put on top of muffins. Divide batter between 12 liners, filling them completely full. Sprinkle with remaining chocolate pieces and coarsely chopped almonds. Bake for 18-21 minutes or until a cake tester comes out almost clean.
