For my easter holidays I had the chance to spend time with my family and friends away from the Milan frenzy. Although I have a few exams coming up in the next few weeks ( four to be exact!) I obviously managed to find some time to bake. This recipe takes absolutely no time! Who doesn’t love a super simple cake that requires no oven and just a few ingredients? And it’s super delicious too! I have to thank my sister this time that helped me with the video. Yep, there is a new video on youtube! It was really fun to film, me and my sister even had a little dance party together while filmino and baking! I really hope that you will like it and that you enjoyed my previous one.

For this cake you only need a few ingredients:

Cookies: you can choose whatever cookie you prefer, here in Italy we love “Pan di stelle”. It’s a chocolate cookie with sugar stars on top. If you can’t find those, any chocolate cookie will do.

Heavy cream: who doesn’t love some good old fashion heavy cream? Put it in a bowl and whisk it until soft and creamy

Chioccolate mousse: Melt 150 gr of dark chocolate in a pan over simmering water. Beat two egg yolks in a bowl and add the melted chocolate. Whisk the egg whites until soft peaks form. Add the egg whites mixture in the chocolate mixture and stir from the bottom to the top until well combined.Processed with VSCOcam with hb1 preset

To assemble the cake:

Dip your cookies in milk and start placing them over a plate at your choice. Once the entire plate is covered in cookies, you can start pouring the heavy cream on top using a spatula or a spoon. Once the first layer of heavy cream is well spreaded, you are going to place a second layer of cookies on top. After that you can pour the chocolate mousse on top of the cookies and spread well. You can do as many layers as you want. I’ve decided to have 6 layers of cookies on my cake, but it’s up to you. Once the last layer is complete (usually I like to finish with cookies on top) put the cake in the fridge for at least two hours.
