Hello everyone! Today I was feeling a little bored at home. It’s starting to get really chilly and rainy outside, so I thought that I would try to make the perfect potato and zucchini pizza and share the recipe with you guys here on my blog. And let’s be honest, If you live in Italy you definetly know how to make a good pizza! Hope you enjoy!!

For the pizza dough
Sieve the flour into a bowl and make a well in the middle. In a cup, mix the yeast, olive oil and sugar into the warm water and leave for a few minutes until the yeast is completly dissolved. Then pour the mixture into the well. Using a fork, bring the flour in gradually from the sides and swirl it into the liquid. When it all starts to come togheter, work the rest of the flour in and knead until you have a smooth and soft dough.
Place the ball of dough into a flour-dasted bowl and cover with a damp cloth. Place the bowl in a warm room for at least an hour until the dough has doubled in size.
In the meantime, slice the potatos and zucchini and place them into a pan with a drizzle of oil, some salt, rosemary and freshly grated black pepper. Cook over medium heat for about five minutes or until almost ready.
When the dough is ready, roll it out onto a rectangular baking tray. Place on top the zucchini and potatos and add a pinch of salt and a drizzle of olive oil.
Heat oven to 250/300 C° and cook for about 15 minutes.
